Keeping It Simple Vegetables

Ingredients

White potatoes, broccoli, cauliflower, asparagus, carrots, onions, butternut squash, or sweet potatoes are delicious roasted, individually or in combination

Oil of your choice

Garlic salt to taste

Optional seasonings: sea salt, celery salt, cumin, za’atar, rosemary, garam masala, curry powder. Cinnamon and nutmeg work well with butternut squash and sweet potatoes

Directions

Preheat oven to 400F degrees. Fill a cookie sheet with bite-size veggies. For best results make sure veggies don’t overlap. Toss with any oil you like and  garlic salt. Mix well. Roast about 15-20 minutes until tender and edges are crispy. Sprinkle with any optional seasonings and serve.
