Old Bay Potatoes
Serves 4-6
Ingredients
For the oven
6 potatoes cut into small chunks, skin left on
2 tablespoons olive oil or canola oil
Garlic salt and pepper to taste
For Sautéing
1 onion, chopped
2 tablespoons Old Bay Seasoning (adjust amount to your taste)
Canola oil for sautéing
Optional - 1 clove of garlic, minced
Directions
Preheat oven to 400F degrees. Lightly spray a cookie sheet with cooking spray. Mix potatoes with oil and sprinkle with garlic salt. Spread out in a single layer on a cookie sheet. Bake for about 20 minutes. Briefly sauté onion in canola oil in a large fry pan. If using garlic, once onions are softened add garlic and stir for a few seconds more. When potatoes are crisp and can be pierced, add them to the saucepan with onions and sprinkle with Old Bay Seasoning. Toss together and cook until potatoes and onions are golden.
