Quinoa Bowl with Ground Turkey
Serves 4
Ingredients
1 cup quinoa
2 cups water or broth
1 lb. ground turkey (or any protein you like)
Veggies cut into bite-size pieces - onion, celery, carrot, fresh or frozen peas (not canned, they’re too mushy), broccoli, definitely spinach - any veggie combination will do
1-2 tablespoons sesame oil
Garlic salt to taste
Canola oil to sauté veggies
Optional seasoning: minced ginger, red pepper flakes, chopped cilantro, chopped scallions, low sodium soy sauce
**This recipe is very adaptable. It’s an even quicker dish made with beans or leftovers.**
Directions
In a medium saucepan, bring quinoa and water (or broth) to a boil. Reduce heat to low and cook for approximately 15 minutes until quinoa can be fluffed with a fork and all liquid is absorbed. Set quinoa aside. While quinoa is cooking, in a large skillet thoroughly cook ground turkey, or your protein choice, with optional seasonings, and set aside in a bowl. Sauté your choice of veggies in the skillet, adding spinach and frozen peas last. Stir a few minutes more until spinach is wilted. Mix in quinoa, ground turkey (or protein of choice), sesame oil and optional soy sauce .
