Roasted Brussels Sprouts with Bacon
1 lb. Brussels sprouts, trimmed and cut in half through the core
2 tablespoons olive oil or canola oil
4 slices raw bacon, cut into 1/2 inch pieces (or substitute precooked bacon bits to be added after Brussels sprouts are cooked.)
2 tablespoons maple syrup or balsamic reduction
Preheat oven to 400F degrees. Place Brussels sprouts flat side down in a single layer on a large sheet pan with sides. Drizzle with oil, season with salt and pepper to taste, and toss to coat. Scatter raw bacon on top of Brussels sprouts. (If using precooked bacon bits, mix in after Brussels sprouts are fully cooked.) Cook approximately 15 minutes, stirring half-way through. Cook another 10 minutes or until Brussels sprouts are caramelized and bacon is crisp. Drizzle with maple syrup or balsamic reduction and serve.
